Days to maturity (DTM) is the number of days from transplant (for started plants) or from germination (for direct-sown crops) to the first harvest. For direct-sown crops, add 7–14 days to account for germination time when calculating from planting date.
Radishes are the fastest at 20–25 days. Lettuce and spinach reach baby leaf stage in 30–40 days. Bush green beans mature in 50–55 days. The slowest common vegetables are garlic (9 months), sweet potatoes (120 days), and corn (70–90 days).
Light frosts (28–32°F) damage most warm-season crops like tomatoes, peppers, squash, and beans. Cold-hardy crops like kale, carrots, beets, and Brussels sprouts actually improve in flavor after a light frost. Cover frost-sensitive crops with row cover if a frost threatens before harvest.
